Sticky Honey Gochujang Chicken is a flavorful Korean-inspired dinner made with juicy boneless, skin-on chicken thighs coated in a sweet, spicy, and tangy glaze. Gochujang, honey, garlic, soy sauce, rice vinegar, and sesame oil create a rich sauce that caramelizes beautifully while keeping the chicken tender and delicious.

  • Total Time: 40 minutes
  • Yield: 6 servings 1x

Ingredients

Scale
  • 6 boneless chicken thighs, skin on
  • 2 cloves garlic, grated with a microplane
  • 3 stalks green onions, white and green parts separated
  • 2 tablespoons gochujang paste
  • 2 tablespoons honey
  • 3 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil

Instructions

  1. Pat the chicken thighs dry with paper towels. This helps the skin become crisp during cooking.
  2. In a medium bowl, combine the grated garlic, gochujang paste, honey, rice vinegar, soy sauce, sesame oil, and the white parts of the green onions. Mix until smooth.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the gochujang mixture. Let the chicken marinate for at least 15 minutes.
  4. Heat a large oven-safe skillet over medium heat. Place the chicken thighs skin-side down and cook for 5–7 minutes, until the skin is golden and crisp.
  5. Flip the chicken and cook for another 2–3 minutes.
  6. Brush the chicken with the remaining sauce and transfer the skillet to a preheated 400°F (200°C) oven.
  7. Bake for 12–18 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
  8. For an extra sticky and caramelized finish, broil for 1–2 minutes while watching carefully to prevent the honey from burning.
  9. Remove the chicken from the oven and let it rest for 5 minutes. Garnish with the green parts of the green onions and serve warm.

Notes

  • Pat the chicken skin completely dry before cooking for the best crispiness.
  • Adjust the amount of gochujang depending on your preferred spice level.
  • Keep a close eye on the chicken when broiling because the honey can caramelize quickly.
  • Serve with steamed rice, roasted vegetables, or a simple cucumber salad.
  • For food safety, cook chicken until it reaches an internal temperature of 165°F (74°C).
